Meat Crust Pizza

Hi, all!  I just wanted to share with you a quick little recipe that you are going to love.  It is called Meat Crust Pizza.  See, hubby and I are trying to go low carb.  I discovered this and we absolutely love it.  Even our son, who shakes his head at most of my low carb dishes, loves this!

I used 2 lbs of 93% lean hamburger, 1 egg, and about 1/2 cup of grated parmesan cheese, mixed well with some Italian seasoning to taste.  Press it into a greased cookie baking pan.  Bake it at 350 for about 20 minutes. Take it out of the oven and drain the fat.  It will shrink to about that size, which is more than enough to feed everyone at dinner.

While the meat crust is baking, I sauteed a chopped onion, half of a green pepper (chopped) and a package of fresh sliced baby bella mushrooms in a little olive oil.

After draining the fat, layer on some pizza sauce, and go clear to the edges.  Then I sprinkled cheese, added sliced pepperoni, salami, and canadian bacon, sprinkle on a little more cheese, then the veggies, then some olives, and finally a little more cheese.

Bake again for about 10 minutes.  TAA DAA...Meat Crust Pizza!  Make a giant salad to go with it, and dinner is served!

HOMEMADE OREO COOKIES!!!

These are SOOOOOOOOOOOOOO GOOOOOOOOOOD!!!  I loved them.  They were quick and easy and so very yummy!

Click on the picture to see the recipe.  I got it from cooks.com.  The one thing I did have to figure out was that 1/2 square of butter equals 1/2 cup.  That was an odd measurement!  Try these, you will love them too!

Mommy, can you make me a fruit crisp?

This was the text message I got from my son last Wednesday.  Being the good mom I am, and thinking that it sounded SOOOOOOO GOOOOD...I ran straight to New Seasons, grabbed fresh berries (blackberry, raspberry and blueberry) and peaches, and made TWO crisps.  The recipe is the standard one from my trusty Betty Crocker cookbook.  It was DELICIOUS over French vanilla ice cream! He wrote me this note after he had some later that evening...It made this mom's heart just melt. 
I folded up the note, and stuck it in my recipe book.

Country Caesar Salad

I was bored with the traditional Caesar salad, wanted to change it up a bit.  I came up with this recipe.  My husband says he likes it way better than a traditional Caesar salad!

Chopped Romaine lettuce, about 6-8 cups or so
1//4 c shredded carrots
2 green onions, sliced
1/4 c freshly shredded Parmesan cheese
1/2 c cooked and crumbled bacon.  I usually chop it into pieces, then fry it.
about 1/4 - 1/3 c of regular old ranch dressing, any brand you like, use more or less to your taste
1 tbsp lemon juice
2-3 hard boiled eggs, quartered

I put the lettuce, carrots, green onion, cheese and bacon in a big bowl.  I added the ranch dressing and the lemon juice, and tossed well.  Put the eggs on top, and serve immediately.  Even my 18 year old son liked it!
